Happy spooky season! I'm Ballet Beautiful NYC Master Trainer Kara. I think Halloween is the most fabulous time of the year. But how can Ballet Beauties enjoy all the sweet treats that make up the season? Here are some vegan recipes for healthy alternatives to some of fall's best indulgences, straight from the #BBKitchen!
Pumpkin and Oat Cookies
These cookies are both nutritious and delicious! Pumpkins are filled with antioxidants and are rich in vitamin A, C and potassium.
All you need is:
- 2.5 cups rolled oats
- 1 cup pure pumpkin puree
- 3 tbsp pure maple syrup
- 1 tsp cinnamon
- 2 tbsp pumpkin seeds
- 2 tbsp dried cranberries
Preheat the oven to 350 degrees. Meanwhile, mix all ingredients together in a bowl to form a thick dough. Then use your hands to create cookie shapes. Place on a baking sheet, bake for about 10 minutes and enjoy!

Apple slices dipped in chocolate
What is Halloween without chocolate? These apple treats are sure to delight the senses!
You will need apples cut into slices and some melted chocolate; I used the Enjoy Life dairy-free dark chocolate chips. Then choose your favorite toppings! Some yummy suggestions include shredded coconut, chopped walnuts or peanuts, chia seeds, granola... whatever you like best!
Melt the chocolate in a small pot over low heat. Place a sheet of parchment paper on a plate or cutting board. Dip the apple slices in the melted chocolate, roll in your chosen toppings and place on parchment paper. Put the apple slices in the fridge to harden for about an hour, and you've got yourself a perfect fall treat!
Candy Corn Popsicles
Just because summer is over doesn’t mean we don’t crave the cool sensation of a sweet popsicle. That's why we've added a special October twist by recreating the candy corn look with these!
All you need is:
- 1 cup coconut milk
- 1 tbsp maple syrup
- 1 tsp pure vanilla extract
- 1 cup frozen pineapple
- 1 cup frozen peaches
- 1/2 cup orange juice
In a bowl mix coconut milk, maple syrup, and vanilla. Pour into popsicle molds and place in the freezer to harden for about 20 min. In a blender, puree frozen pineapple and water, and blend until thick and smooth. Then pour over the frozen coconut mix and place back in the freezer. While that layer is freezing, blend together peaches and orange juice for the final touch. Finally, fill the rest of the popsicle mold and freeze again.
Curl up with your favorite haunted movie and enjoy!!!
