Hello Ballet Beauties! During the summer there’s a wonderful selection of seasonal produce available, which makes us excited to cook. Farmers markets are filled with delicious vegetables, fruits, herbs and more! Since we have been very inspired to get in the kitchen and make fun recipes, we wanted to share some of our favorite seasonal recipes that we love during the warmer months. Hope you enjoy!

Sparkling Pink Mint Lemonade
We like to throw this light spritzer together when we are in the mood for a refreshing, delicious drink! We made it for one, but you can easily adjust this recipe to fill a pitcher to share. Put a few raspberries at the bottom of the glass, and two thin lemon slices. Add 1 part of your favorite organic lemonade, and 1 part sparkling water (an equal ratio). Add as much ice as you would like, and garnish with fresh mint!
Please note: Feel free to tweak the ratios of the recipe to your tastes! If you love raspberries add more! If you like it less sweet you can add more sparkling water. This drink is easily customizable to fit your individual preferences!
– Organic Lemonade
– Sparkling water
– 1 cup fresh raspberries
– 1 lemon
– Fresh mint
– Ice as needed
Summer Strawberry Salad with Grilled Chicken & Blush Vinaigrette
In a small bowl mix together the Blush Vinaigrette ingredients and set in the fridge while you make the salad.
Fill a large salad bowl with baby spinach, add sliced strawberries, and grilled chicken. Top with chunks of feta cheese, sugar snap peas and toasted almonds. Drizzle with blush vinaigrette and enjoy!

– Blush Vinaigrette: 1/2 cup red wine vinegar, 3 tbsp lemon juice, 2 tsp honey, 2 tsp salt, black pepper, 1 cup olive oil.
Fresh Peaches with Vanilla Frozen Yogurt
Fill one small bowl with two scoops of your favorite vanilla frozen yogurt. Top with sliced peaches and toasted walnuts.
