It’s that time of year again beauties! Sun, sand, tans and picnics are taking over the weekends. With all the outdoor adventures that will shape this summer it is important to keep healthy and hydrated the Ballet Beautiful way.
Here are a few favorite beautiful, healthy, fresh bites that you can add to your next picnic, BBQ or garden party this summer.
Deviled Eggs:
Perfect for a picnic, these protein packed snacks will spice up your spread without the extra calories and fat.
Mix the following in with the yolks of 6 hard boiled eggs; 1 tbs spicy brown mustard, 1/4 cup reduced fat mayonnaise with olive oil, 1 tsp white vinegar, 2 tbs sweet pickle relish and a pinch of paprika! (remember, spices like paprika are a great way to add flavor and avoid salt)
Salad with Tuna and Avocado:
The combination of salty and sweet in the salad is lovely. Plus it is filling and refreshing, ideal for a picnic entree to share with your blanket mates on a hot day.
On a bed of mixed greens or spinach add 1 can Italian tuna packed in olive oil, 1 ripe avocado, diced cucumbers, 1/4 cup dried fruit (whatever you have!), a handful or raw almonds and dress with a simple olive oil, pepper and Balsamic vinegar mix.
Baked Kale:
Raw, sautéed, juiced etc, kale is a super food that you can easily add to your diet. This baked kale recipe is a favorite because it is simple, fast and yummy. Also a great healthy alternative to that bag of potato chips at every picnic!
Just wash, dry and cut a head of kale into big pieces, toss with olive oil, bake at 350 degrees for about 15-20 minutes and lightly sprinkle with sea salt.
